Sunday Brunch is my absolute favorite meal! Waffles are one of my favorite breakfast indulgences and I love what a blank canvas waffles can be. They can be dressed up as either sweet or savory. The past few weekends I have been challenging myself to whip up creative Sunday Brunch at home instead of going out and eating food I know I can make in the comfort of my own kitchen in my PJ’s! Yesterday was no exception… I was craving something peanut buttery and found an amazing recipe for Crunchy Peanut Butter Waffles. They were incredibly easy to make and I literally had all of the ingredients in my pantry without any additional runs to the grocery store. This recipe made roughly 6 waffles and I dressed them up with maple syrup, sliced bananas, and a few sprinkles of chocolate chips to make this Sunday Brunch a little extra fancy!

Crunch Peanut Butter Waffles

Ingredients
  1. 1 3/4 cups flour
  2. 3 teaspoons baking powder
  3. 3 tablespoons sugar
  4. 1/4 teaspoon salt
  5. 1/4 cup plus 2 tablespoons butter, melted
  6. 6 tablespoons crunchy peanut butter
  7. 2 eggs
  8. 1 1/2 cups milk
Instructions
  1. Sift together the flour, baking powder, sugar, and salt.
  2. Put melted butter, peanut butter, and eggs on top of the dry ingredients and stir to combine. Whisk in the milk, just until mixed. If the batter seems too thick, add more milk a tablespoon at a time.
  3. Cook in waffle iron according to manufacturer's instructions. I cooked mine for roughly 5 minutes until the middle was browned and the waffled was cooked through. Top and serve immediately.
