Happy Super Bowl Sunday! Nothing screams Super Bowl more than Buffalo Sauce, in my opinion! I love a reason to indulge in a little junk food flavor, while still eating relatively clean. These Slow Cooker Buffalo Chicken Meatballs are really a great balance of clean eating, with a buffalo blue cheese flavor, which feels a bit like the naughty bar food we all love to indulge in from time to time! These chicken meatballs are made from scratch with ground chicken, panko, egg, garlic and onion powders, and green onions. After making the meatballs they are browned in the oven for roughly 5 minutes, and then nestled in the bottom of the slow cooker and tossed with buffalo sauce.  The meatballs cook on low for 2 hours and the final step is a drizzle of blue cheese dressing. Is your mouth watering yet? These are a fun bite size snack to nibble on while getting ready for Lady Gaga’s half time show. Simply add some individual toothpicks to the meatballs and your festive Super Bowl 51 appetizer is ready!

Ingredients
  1. 1 pound ground chicken
  2. 3/4 cup panko breadcrumbs
  3. 1 large egg
  4. 1/2 teaspoon garlic powder
  5. 1/2 teaspoon onion powder
  6. 2 green onions, thinly sliced
  7. Kosher salt and freshly ground black pepper, to taste
  8. 3/4 cup buffalo sauce
  9. 1/4 cup blue cheese dressing
Instructions
  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper; set aside.
  2. In a large bowl, combine ground chicken, Panko, egg, garlic and onion powder and green onions; season with salt and pepper, to taste.
  3. Using a wooden spoon or clean hands, stir until well combined. Roll the mixture into 1 1/4-to-1 1/2-inch meatballs, forming about 24 meatballs.
  4. Place meatballs onto prepared baking sheet and bake for 4-5 minutes, or until all sides are browned.
  5. Place meatballs into a slow cooker. Add buffalo sauce and gently toss to combine. Cover and cook on low heat for 2 hours.
  6. Serve immediately, drizzled with blue cheese dressing, if desired.
