Salmon is one of my favorite go to weeknight meals…it’s healthy, quick, and leaves you feeling full without all of the heavy bloating you can get from carb heavy meals! Foil packets are pure genius and I have just now asked myself why I don’t cook this way more often. It’s literally oven to table without all of the hassle and cleaning of pans and baking sheets – WINNING!
Salmon is already SO flavorful so it doesn’t take much to enhance this beautiful piece of fish. I love lemon and dill with salmon as it brightens the fish and adds the perfect amount of acid to balance the oiliness of the fish. First step is preparing your foil packets…simply tear off a piece big enough to house the piece of salmon and asparagus stems and then when you’re ready to bake you simply fold the foil together to tent, ensuring that you seal up the ends to make an enclosed packet.
This recipe is so easy you don’t even need a real recipe…just layer it all together! On top of the foil layer the asparagus stems, salmon, 2 slices of lemon, a few sprigs of dill, a good sprinkle of salt and pepper…and any other spices or herbs you’d like to add. I added a clove of minced garlic as well…yummy!
Seal up your foil packet and bake in the oven (400 degrees) for 25 minutes! Just remember when opening your foil packet to be very careful as the steam will be quite hot! Each foil packet should include 1 piece of salmon…so if cooking for 4 plan to prepare 4 packets all together.
