Chili Lime Corn Salad

Just this past week when visiting Whole Foods for a few last minute groceries I noticed a stand of fresh sweet corn setup just outside of the store entrance. Fresh corn really seems to be a tell tale sign that summer has arrived…(well, almost arrived…we are 2 days away people)! I just couldn’t resist buying a few ears of corn and trying my hand at a fresh corn salad to accompany the tacos I had planned for dinner that night. We started a small herb garden on our balcony just after moving in a few weeks ago and our cilantro is growing out of control right now (thanks to all of the Pittsburgh rain we’ve been having…) so I’ll take any excuse I can get to snip a few stems off and put the cilantro to use in the kitchen! This corn recipe really defines my style of cooking…a few simple fresh ingredients and some flavor kicks with fresh herbs and spices, and in this case a squirt of fresh lime juice! It’s a refreshing and simple salad that comes together very quickly and really goes with anything! Enjoy the refreshing taste of summer!

Chili Lime Corn Salad
Serves 4
A refreshing summer corn salad filled with fresh flavors and spices and finished with a squirt of lime juice and queso fresco!

Ingredients
  1. 6 ears of corn, husk and silk removed
  2. 2 tablespoons melted butter
  3. 2 tablespoons freshly squeezed lime juice
  4. 1/2 teaspoon chili powder
  5. 1 tablespoon chopped cilantro
  6. 1/2 cup crumbled queso fresco
  7. 1/4 teaspoon salt (or to taste)
Instructions
  1. In a large pot, bring water to a boil. Boil the corn for 3 minutes, then remove and allow to cool slightly so that they can be handled.
  2. Cut kernels off the cob into a large bowl. Set aside.
  3. In a small bowl, whisk together butter, lime juice, chili powder, and chopped cilantro.
  4. Pour the chili lime mixture over the corn and mix to coat. Add the crumbled queso freso and stir. Season with salt to taste.
  5. Serve at room temperature. Refrigerate leftovers.
Notes
  1. If you can't locate queso fresco feta cheese would be a good substitute.
