Greek Yogurt Banana Chocolate Chip Muffins

One of my favorite things to do on a lazy morning at home is bake breakfast treats! There’s nothing better than staying in your PJ’s, watching TV, and biting into warm straight from the oven muffins! A few days ago I had a few extra bananas lying around that were on their last leg so I decided to search for a banana muffin recipe. This recipe uses Greek Yogurt instead of oil which makes the muffins extra moist and fluffy, slashes a few calories, and ups the protein. I also threw in about 3/4 cup of chocolate chips to add a little decadence to this breakfast treat! You could even add in some chopped walnuts or dried fruit – whatever suits your fancy! I quickly discovered that my husband also found these breakfast treats to be delicious late night snacks or dessert substitutions! Time to hide my own secret stash somewhere!

Ingredients
  1. 2 1/4 cups flour
  2. 1 1/2 teaspoons baking powder
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 4 tablespoons butter, softened
  6. 3/4 cup sugar
  7. 1/4 cup brown sugar
  8. 3 medium bananas, mashed (about 1 cup)
  9. 1 cup plain greek yogurt
  10. 2 eggs
  11. 1 1/2 teaspoons vanilla
  12. 1 cup chocolate chips
Instructions
  1. Preheat oven to 350. Line muffin tins (regular size) with baking cups/cupcake wrappers.
  2. In a medium bowl whisk together flour, baking soda, baking powder, and salt. In a larger bowl cream together butter and sugars. Add mashed bananas, greek yogurt, eggs, and vanilla, and mix well.
  3. Add flour mixture to wet ingredients and mix until combined. Stir in chocolate chips if desired.
  4. Pour about 1/4 cup of batter into each muffin cup. Bake for 20-15 minutes until tops are lightly golden.
  5. Allow to cool for a few minutes in the muffin tins before removing and allowing to cool completely. Serve warm or at room temperature, store in airtight container.
