Chocolate Peanut Butter Bon Bons

In keeping with my Christmas foodie gifts I wanted to share this festive and oh so easy Chocolate Peanut Butter Bon Bon recipe! I am obsessed with peanut butter, and eat it most everyday. Add a little chocolate to that and I’m in heaven! These little bon bons are two bite treats that resemble a buckeye, but instead of leaving a small piece of the peanut butter exposed these bon bons are fully dipped in chocolate to resemble a truffle. They are the perfect gift to pack into a small cello bag or cute gift box and tie up in pretty plaid ribbon for another easy, homemade Christmas gift! Chocolate Peanut Butter Bon Bons

Creamy peanut butter filling coated with rich chocolate creates a simple but immensely flavorful holiday treat.

Ingredients
  1. 1 cup confectioners sugar
  2. 1/3 cup + 1 tablespoon creamy peanut butter
  3. 2 ounces cream cheese, softened
  4. 1/2 teaspoon vanilla extract
  5. 2 cups semisweet chocolate chips
Instructions
  1. In the bowl of an electric mixer fitted with the paddle attachment, mix the sugar, peanut butter, cream cheese and vanilla together on medium speed until combined.
  2. Shape mixture into 1/2 - 3/4 inch balls. Place on baking sheet lined with wax paper. Cover loosely, transfer the pan to the freezer and chill for 30 minutes.
  3. When ready to dip the truffles, melt the chocolate chips in a heatproof bowl set over a pot of simmering water. Dip each chilled truffle, one at a time, coating in chocolate and shaking gently to remove the excess.
  4. If at any point during dipping, the dough balls become too soft, return to the freezer to chill for 15 minutes.
  5. Transfer to a wax-paper lined surface. Once all the truffles have been dipped, store them in the refrigerator until ready to serve.
