Holiday Caramel Chex Mix

I debuted this recipe 2 years ago during my 25 Days of Christmas, but after many rave reviews I just had to bring it back again this holiday season!  This Holiday Caramel Chex Mix is by far one of the biggest WOW food gifts I’ve made.  This year I decided to make take home treat bags for all my girlfriends who attended my ‘Tis the Season party last night! Who doesn’t love a little take home treat after a party, plus all the husbands were happy to enjoy a little something sweet once the ladies made it home! Who knew such a simple recipe would be such a crowd favorite! This Chex Mix has tons of tasty mix-in’s that build lots of yummy, sweet flavor! These are the perfect little food goodies to wrap in pretty cellophane treat bags with ribbon and pass out to friends and neighbors!

Ingredients
  1. 8 cups of Chocolate Chex cereal (or 6 cups Rice Chex cereal and 2 cups Cocoa Krispies)
  2. 3/4 cup packed brown sugar
  3. 6 tablespoons butter
  4. 3 tablespoons light corn syrup
  5. 1/4 teaspoon baking soda
  6. 1 cup mini Reese's peanut butter cups
  7. 1 cup mini marshmallows
  8. 1/2 cup caramel bits
  9. 1 tablespoon heavy cream
  10. 1/2 cup milk chocolate chips
  11. 1/2 cup white chocolate chips
Instructions
  1. Line cookie sheet with waxed paper.
  2. Pour measured cereal into a large microwaveable bowl. In a 2-cup microwaveable measuring cup, microwave brown sugar, butter and corn syrup uncovered on high 1-2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved. Pour caramel mixture over cereal, stirring until evenly coated.
  3. Microwave on high for 3 minutes, stirring every minute. Spread on cookie sheet. Cool 10 minutes.
  4. Make sure Chex mixture is cool to the touch (so candy doesn't melt). Evenly sprinkle mini peanut butter cups and mini marshmallows over the Chex mixture.
  5. In a small microwaveable bowl, microwave caramel baking bits and cream uncovered on high 1 minute or until chips can be stirred smooth. Use a spoon to drizzle over Chex mixture. Repeat with milk chocolate baking chips and again with the white baking chips. Quickly sprinkle coarse sea salt over all the Chex mixture while candy drizzles are still wet. Refrigerate until set. Break apart and store in tightly covered container.
Notes
  1. I had a hard time locating the Chocolate Chex Mix cereal so I used Rice Chex cereal and Cocoa Krispies. I've even made it with only the Rice Chex and that comes out just as tasty as there are so many additional mix-in's to add chocolate flavor.
