It’s officially December which means everything is coming up Christmas! I spent today putting the finishing touches on our Christmas decorations today…all while listening to Christmas music and of course baking a delicious treat in the oven! These Cranberry Eggnog Muffins are the perfect holiday muffin with tart cranberries, sweet eggnog, walnuts and hints of cinnamon and spice all baked together. This recipe easily converts from 18 muffins to 2 mini loaves of bread. These are a great treat to enjoy yourself or share with friends and neighbors this holiday season!

Cranberry Eggnog Muffins
These muffins are the perfect holiday muffin with tart cranberries, sweet eggnog, walnuts and hints of cinnamon and spice all baked together.

Ingredients
  1. 2 cups cranberries, chopped
  2. 1 cup sugar, divided
  3. 3 cups flour
  4. 4 teaspoons baking powder
  5. 1 1/2 teaspoons salt
  6. 1 1/2 teaspoons cinnamon
  7. 1/2 teaspoon nutmeg
  8. 2 eggs
  9. 1 1/2 cups eggnog
  10. 2/3 cup melted butter
  11. 1/2 cup chopped walnuts (optional)
Instructions
  1. Preheat oven to 375 degrees.
  2. Chop the cranberries and cover with 1/2 cup of sugar. Put aside to sweeten while you make the batter.
  3. In a separate bowl stir together the dry ingredients (flour, 1/2 cup of sugar, baking powder, salt, cinnamon, and nutmeg).
  4. In a separate bowl mix together the wet ingredients (eggs, eggnog, and melted butter).
  5. Pour the wet ingredients over the dry ingredients and stir until just mixed. Fold in the walnuts and then the chopped cranberries.
  6. Fill 18 greased muffin cups or two loaf pans. Bake the muffins for 14-20 minutes. If you're making loaves, bake for 35-40 minutes.
  7. Allow to cool and enjoy this holiday treat! These are absolutely delicious with a small spread of butter and jam.
