After a nice weekend Up North in Michigan to enjoy my hubby’s birthday we are back home and I am armed with lots of new recipes to test out in the kitchen! One of my favorite Up North activities is relaxing in an antigravity chair and reading through all of my food magazines while soaking in the sunshine. This past weekend I found some amazing late summer recipes to test out and couldn’t resist starting off with this summer tomato soup recipe chock full of shrimp, zucchini, and corn from Real Simple. This one pot, whole grain, healthy summer soup is prepared in roughly 40 minutes and is a great way to showcase in season vegetables like corn and tomatoes. I paired this summer soup with a fresh, peppery arugula salad for an easy Monday night dinner! 

Summer Tomato Soup with Shrimp and Corn

Ingredients
  1. 2 tablespoons olive oil
  2. 2 poblano peppers, seeded and chopped
  3. 1 large onion, chopped
  4. 3 cloves garlic, sliced
  5. Kosher salt and black pepper
  6. 2 small zucchini, chopped
  7. 1 28-ounce can diced tomatoes
  8. 1 pound raw medium peeled and deveined shrimp
  9. 2 cups fresh (from 4 ears) or frozen corn kernels, thawed
Instructions
  1. Heat the oil in a large pot over medium-high heat. Add the poblanos, onion, garlic, and 1/2 teaspoon each of salt and black pepper.
  2. Cook, stirring, until softened, 10-12 minutes. Add the zucchini and tomatoes (and their juices). Cook, stirring, until the zucchini is crisp-tender, 12-15 minutes.
  3. Add the shrimp, corn, and 3 cups water. Bring to a simmer. Cook, stirring occasionally, until the shrimp are white throughout and the corn is tender, 5-6 minutes. Sprinkle with black pepper and crushed red pepper (if you want a little bit of heat to your soup) and serve!
