S'mores Bites

One of my all time favorite summertime dessert classics is s’mores! The challenge with being an urbanite is that there’s no where in the city to enjoy these campfire treats. I found this fabulous recipe on Pinterest which brought this classic campfire treat inside to your oven! The key to making these s’mores bites look authentic is the broiler – it creates that browned marshmallow top which signifies the marshmallows are appropriately toasty and gooey for the s’mores sandwich! I’m whipping these up tonight for my girlfriends for our Bachelorette Finale and I know they will be a hit! Who can turn down a s’mores bite with a crunchy graham cracker crust cup, melted Hershey’s chocolate and gooey marshmallow topper – not this girl! Pour that glass of wine and get the napkins ready for this summertime treat!

Ingredients
  1. 7 whole graham crackers (equals 1 cup), finely crushed
  2. 1/4 cup powdered sugar
  3. 6 tablespoons butter, melted
  4. 2 (1.55 oz) milk chocolate candy bars (I used Hershey's), divided into rectangles
  5. 12 large marshmallows, cut in half
Instructions
  1. Preheat the oven to 350°F.
  2. Finely crush the graham crackers into crumbs, I used my food processor. Or if you really want to make this easy you can simply buy the graham cracker crumbs at the grocery store.
  3. Combine graham cracker crumbs, powdered sugar and melted butter into a small bowl. Evenly divide crumb mixture into each cup of a 24 cup mini muffin pan, grease slightly before using. Press crumbs down to form shallow cups.
  4. Bake 4-5 minutes or until edges are bubbling.
  5. While that's baking, break the candy breaks into the divided rectangle pieces. Also cut the marshmallows in half using scissors that have been sitting in cold water.
  6. Remove the pan from the oven and place one chocolate rectangle into each cup. Place one marshmallow half, cut-side down, into each cup.
  7. Return to oven for 2-4 minutes or until marshmallows are just slightly softened.
  8. If you'd like the tops to be brown, turn the oven to broil, and broil the s'mores bites for 1-2 minutes.
  9. Cool on a cooling rack for 15 minutes before carefully removing them from the pan.
