Watermelon Feta Mint Salad

It’s officially July – what are you making this weekend for your 4th of July festivities? As a kid I always remember having big juicy pieces of watermelon at our 4th of July family BBQ’s and just biting into a watermelon slice as an adult brings back a rush of childhood memories. A few nights ago my hubby and I watched The Sandlot – a childhood classic that brings back the warm and fuzzy feeling of days of old! One of my favorite scenes in the movie is the 4th of July block party at dusk with all the kids running around with sparklers, eating hot dogs and watermelon slices, and then playing baseball at night underneath the fireworks – ah, to be a kid again! Well, all this nostalgia got me thinking about how to create my own grownup memories of watermelon. I found this fabulous recipe for a Watermelon Feta Mint Salad and it was so delicious I just had to share! This light and fresh salad is made with watermelon cubes, red onion, fresh herbs (basil, cilantro and mint), lime juice, balsamic and feta cheese – simply toss together and serve! 

Watermelon Feta Mint Salad

  1. 1/2 (6-pound) chilled, seedless watermelon, flesh cut into 1-inch cubes (4 cups)
  2. 1/2 cup thinly sliced red onion
  3. 1/2 cup thinly sliced fresh basil leaves
  4. 1/2 cup chopped fresh cilantro
  5. 1/4 cup finely chopped fresh mint leaves
  6. 3 tablespoons fresh lime juice (from 2 large limes)
  7. 2 ounces crumbled feta cheese
  8. 1 - 1 1/2 tablespoons olive oil
  9. 1 tablespoon balsamic vinegar, or more to taste
  10. Salt and Black Pepper to taste
  1. Gently toss all ingredients together in a large bowl. Serve immediately.
