Skewered Cantaloupe with Honey and Mint

Looking for a lazy Sunday night dessert that you can pull together in minimal time and with only a few ingredients? I have found your new go to BBQ dessert you will make over and over this summer! Skewered cantaloupe cubes that are brushed with a honey, butter, mint glaze and grilled until lightly browned! During the summer months I always challenge my husband to cook all of our dinner components on the grill – the cleanup is incredibly easy and it helps to keep the heat out of the house on hot, humid, summer days. This is a fresh, light, satisfying way to end any hot summer night! I think I’ll be enjoying this with a glass of crisp white wine to help me wash down all of the delicious flavors!

Ingredients
  1. 1 (2 1/2 pound) firm but ripe cantaloupe, peeled, seeded, and cut into 1 1/2 inch cubes
  2. 8 wooden skewers, soaked in water for 30 minutes
  3. 1/4 cup butter
  4. 1/2 cup honey
  5. 1/3 cup chopped fresh mint leaves
Instructions
  1. Pre-heat your outdoor grill to medium (325 - 375 degree) heat.
  2. Thread cantaloupe onto skewers.
  3. Melt butter with honey in a small saucepan over low heat. Stir in mint. Brush sauce onto cantaloupe.
  4. Lightly oil grill. Grill skewers, turning as needed, until grill marks appear and edges brown, 4-6 minutes. Serve with remaining sauce.
Notes
  1. You can double skewer the cantaloupe - I found this helps when turning the slippery melon on the grill.
