Green Apple and Carrot Slaw

After my inaugural grill session this past Memorial Day I found myself biting into a lightly charred hot dog craving something I rarely indulge in…COLESLAW! Why this sounded so delicious I’m not sure. Maybe the kick off to summer BBQ festivities or perhaps it was the 80 degree heat that made a chilled slaw sound oh so delicious. Regardless, I had a craving that needed to be satisfied. So, after a bit of hunting online for a healthy version, I found this Green Apple and Carrot Slaw. While it does have a small bit of mayo added the majority of the slaw is mixed with Greek yogurt, rice vinegar and honey. It’s tangy, refreshing and filled with green apples and carrots. This recipe also has raisins. I decided to opt out of adding raisins and instead added cashews. You can easily swap this ingredient for nuts, cranberries or even sunflower seeds. Here’s to kicking off the backyard BBQ season! 

Green Apple and Carrot Slaw

A refreshing and healthy slaw made up of Granny Smith apples, carrots, and a tangy dressing made with mayo, rice vinegar, Greek yogurt and honey.

Ingredients
  1. 10 ounces shredded carrots
  2. 4 cups Granny Smith apples, cut into matchstick sized slices
  3. 1 cup raisins (or you can substitute for cashews)
  4. 1/4 cup mayonnaise
  5. 3 tablespoons non-fat Greek Yogurt
  6. 3 tablespoons rice vinegar
  7. 3 tablespoons honey
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon celery seeds
Instructions
  1. In a medium sized bowl whisk mayonnaise, Greek yogurt, rice vinegar, honey, salt and celery seeds.
  2. Add carrots, apples and raisins (or cashews). Toss together until well mixed and serve.
