BBQ Brusells Sprout Pizza

Happy ALMOST Friday! Wondering what to cook for dinner tonight…yeah, I’m with you on the staring into the fridge at the end of the week thinking…what’s left in here to make for dinner? At this point in the week I’m a little rundown and looking for a low maintenance, quick, healthy option. This week I decided to call it quits on the late work night take out option and try a homemade vegetarian pizza instead…saving a little in my wallet and on my wasteline! Instead of whipping up the usual Italian style pizza with marinara sauce I decided to live a little and break out the BBQ sauce for a Southwestern spin! Bet you didn’t know BBQ sauce makes for a darn good pizza! I decided to top with brussels sprouts, red onion, and then a few big handfuls of cheese! My cheating for this recipe is buying a Trader Joe’s whole wheat pizza crust – I’m all for the homemade things, but it’s low maintenance Thursday people! The final addition before serving is a sprinkle of crushed red pepper flakes – then you are ready to sink your teeth into this homemade, easy, weeknight veggie pizza!

Ingredients
  1. Pizza Dough Ball (I purchased a Whole Wheat one from Trader Joe's)
  2. 1/4 cup BBQ sauce
  3. 1/2 cup brussels sprouts, cut into fourths
  4. 1/2 red onion
  5. 2 cups shredded mozzarella cheese
Instructions
  1. Pre-heat oven to 400 degrees.
  2. Finely chop the onions and saute in light olive oil over medium heat. Cook until they are brown, but not burnt. This will bring out the sweetness of the onions, which pairs well with the BBQ sauce. Once finished cooking set aside until the pizza is ready to be assembled.
  3. Saute the cut brussels sprouts in the same pan with a bit more olive oil, roughly 5 minutes. You're looking to soften them and add a few crispy edges, but they won't necessarily be completely cooked through. They will cook a little more while the pizza bakes in the oven.
  4. Roll out the pizza dough on a pizza stone or sheet pan and cook for 6-7 minutes. Pull out of the oven and spread on the BBQ sauce. Add the cooked onions, brussels sprouts, and the cheese.
  5. Bake for 10-12 minutes until the cheese is bubbly and the edges of the crust look crispy. Finish with a sprinkle of crushed red pepper flakes, if you desire, and ENJOY!
