Quinoa Wraps

Starting to wonder what you’re going to make for lunch today? Look no further…this Black Bean, Avocado and Quinoa Wrap is so easy to put together and is full of veggies, protein and a little indulgence of feta cheese! You only need a few items that you might already have in your fridge or pantry. Feel free to add in a few extra veggies such as red peppers, cucumbers or onions – it’s YOUR wrap so feel free to be creative with it! I used a Spinach wrap but you can use a plan tortilla or veggie wraps that come in many flavors. You can also slather on a little bit of hummus on the wrap before adding the filling – I love to do this as it adds a nice creamy flavor. I typically make a big container of quinoa each week and keep in the fridge so whipping together recipes such as this is easy. If you don’t do that – not to worry, quinoa can be ready within 15 minutes or less!

Ingredients
  1. 1 cup of dry quinoa, rinsed (or use any leftover quinoa you have already in the fridge)
  2. 2 cups water
  3. 1 15-ounce can of black beans, drained
  4. 1 ripe avocado
  5. 6-8 spinach leaves
  6. Feta cheese, to taste
  7. 4 Large (9-inch) tortillas or wraps
  8. Also...you can add red peppers, cucumber and onions...your veggie preference!
Instructions
  1. To make the quinoa bring the 1 cup of well rinsed quinoa and 2 cups of water to a boil in a medium sauce pan. Once the quinoa has come to a boil, give it a stir, cover it, and reduce the heat to simmer. Cook the quinoa until all the water is absorbed, about 10-15 minutes. Be sure to check your package of quinoa for cooking instructions, as they all vary slightly.
  2. To assemble to wrap take the amount of quinoa that you want to put in your wrap and put it in a small bowl, add in some black beans, and feta cheese and mix together. Start by layering your spinach on the wrap first, right down the middle. Then add the quinoa mixture. Continue to add any additional veggies you'd like to include. Top with fresh sliced avocado. Wrap it up like a burrito and enjoy!
  3. You can either serve this wrap hot or cold. If you prefer hot you can simply warm on a grill pan on the stove and sear on both sides.
