Orzo Salad with Chickpeas, Cucumbers, Lemon and Dill

 

With Spring’s official arrival tomorrow on March 20th I just couldn’t help but share a fresh, healthy, spring inspired salad! You can use any Orzo Pasta as your base – I chose to use a Whole Wheat Orzo which had a slightly nutty flavor (and really just felt healthier!). This Orzo Salad is then “beefed up” with fresh herbs (dill), chopped vegetables (red onion, cucumbers) and protein packed chickpeas. The dressing is a lemony dressing with olive oil, garlic and dill – just drizzle on top and add a few feta cheese crumbles and you are ready to eat and enjoy! This salad holds up extremely well in the fridge and is great on the go. To expand the life of the salad dress each time you are eating versus mixing it all in at once when you prepare it. 

Orzo Salad with Chickpeas, Cucumbers, Lemon, Dill, & Feta

For the Salad
  1. 1 cup uncooked orzo
  2. 1 (15-ounce) can chickpeas, drained and rinsed
  3. 1 cup chopped cucumber
  4. 1/2 cup crumbled feta cheese
  5. 1/4 cup chopped fresh dill
  6. 1/4 cup diced red onion
For the Dressing
  1. 3 tablespoons olive oil
  2. 3 tablespoons fresh lemon juice
  3. 1 clove garlic, minced
  4. 1 tablespoon finely chopped fresh dill
  5. Salt and freshly ground black pepper, to taste
Instructions
  1. Cook orzo pasta according to package directions. Drain the orzo and rinse with cold water to stop the cooking and to wash away some of the starches. Allow the pasta to cool.
  2. In a large bowl, combine orzo, chickpeas, cucumbers, feta, dill, and red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic, dill, salt, and pepper. When ready to eat drizzle dressing over salad and stir until ingredients are well coated.
