Spicy Ramen Noodle Bowl

Warm, flavorful noodle bowls are delicious to make and feel so cleansing and healthy to your body this time of year when it’s dreary, snowy and just blah outside! I like to kick mine up a notch with some heat, sriracha, in this case to add some POW to the packaged ramen noodles.  This noodle bowl has a delicious broth to create a blend between a noodle bowl and soup – it’s chock full of fresh veggies, dried herbs, packaged ramen noodles, vegetable stock and sriracha. I decided to top off my noodle bowl with scallions and cilantro for some additional flavor and color. You can add whatever else sounds good to you…bean sprouts, unsalted cashews, poached egg – the topping options are endless! This recipe yields roughly 6 servings so feel free to package up and bring to work for lunch or enjoy another day in the week!

Ingredients
  1. 2 tablespoons sesame oil
  2. 2 tablespoons sriracha hot sauce
  3. 1 small onion, diced
  4. 1 small roma tomato, diced
  5. 1 tablespoon ginger, grated
  6. 5 cloves garlic, minced
  7. 1/2 teaspoon garlic powder
  8. 1/2 teaspoon celery salt
  9. 4 cups vegetable broth
  10. 2 cups water
  11. 1 tablespoon soy sauce
  12. 1 teaspoon rice vinegar (optional...this adds a more tangy flavor)
  13. 3 packages ramen noodles
  14. 1/2 cup scallions, chopped
  15. 1/2 cup cilantro, chopped
Instructions
  1. Add the sesame oil and sriracha to a large stockpot and bring to a simmer over medium-heat. Add the onion and tomato and cook for 4 minutes, stirring occasionally. Add the ginger, garlic, and seasonings; cook for 2 minutes or until fragrant. Add 2 cups of water and transfer mixture to a blender or food processor and pulse until smooth. Return mixture to the pot and add the broth.
  2. Bring to a simmer; add soy sauce and vinegar (if using), and simmer for 8-10 minutes. Taste and adjust seasoning as needed. Add the ramen noodles to the broth and simmer for an additional 2-3 minutes, or until the noodles have softened.
  3. Add the scallions, stir to combine. Remove pan from heat, ladle soup into bowls, and top with cilantro.
