Slow Cooker Turkey, Sweet Potato and Quinoa Chili

It’s Sunday in January – in our house that means NFL Playoff season – normally I must admit it’s not that exciting past November as the Detroit Lions are usually on a losing streak (shh, don’t tell my husband I said that) – but, this year they are in the first round of the playoffs! Kick off against the Dallas Cowboys is tonight and there was a request for a meal that might feed a few friends who will be joining for the playoff game! My answer to any weekend meal requests – THE SLOW COOKER! It’s such an easy way to make something hearty and delicious meal with minimal effort that will feed a crowd. As we are only a few days into 2015, I’d like to stay on track with my New Year’s resolutions – so, I decided to try out this new ground turkey, sweet potato, quinoa chili. This chili is full of lots of great spices and a bit of heat along with the sweet flavors of sweet potato and baked beans.  I topped everything with some scallions, chopped avocado and crumbled tortilla chips! GAME TIME!

Ingredients
  1. 1 pound ground turkey
  2. 1 large shallot
  3. 3 garlic cloves, minced
  4. salt and pepper
  5. 3 cups chicken broth
  6. 28 ounce can crushed tomatoes
  7. 15 ounce can baked beans
  8. 1 cup uncooked quinoa, rinsed
  9. 1 large sweet potato (about 1lb) peeled and chopped small
  10. 2 tablespoons chili powder
  11. 1 teaspoon cumin
  12. 1/2 teaspoon salt
  13. 1/2 teaspoon paprika
  14. 1/4 teaspoon red chili pepper flakes
  15. Top with shredded cheese, chopped avocado, tortilla chips, scallions
Instructions
  1. Add ground turkey and shallot to a large skillet over medium-high heat. Season liberally with salt and pepper then cook until no longer pink, breaking turkey up as it cooks. Add garlic then cook for 30 more seconds then add to a 6 quart crock pot.
  2. Add remaining ingredients, except toppings, into crock pot then cook on high for 3 hours, or low for 5-6 hours, or until sweet potatoes are tender.
  3. Serve with toppings. May need to add more chicken broth when reheating.
