Holiday Cranberry Salsa

OK, so I’m a sucker for any food that amps up the festive factor and this holiday themed salsa completely fit the bill on this one! I just couldn’t resist trying this uber festive cranberry salsa…in my house there are 2 things always stocked (NO MATTER WHAT…) – tortilla chips and salsa. Now, the key was swapping the usual Rick Bayless salsa for this homemade cranberry version…then awaiting the reaction from the hubby. This salsa comes together so easily with a food processor – all you need to do is a little chopping and layering of the ingredients in the bowl of the food processor and then pulse away! The end result is a a delicious mix of sweet and salty, juicy and crunchy! The final result in the kitchen – happy, refreshingly surprised and addicted hubby to the festive holiday salsa! Holiday Cranberry Salsa

A festive holiday salsa that makes the perfect sweet and salty and crunchy and juicy combination!

  1. 2 cups cranberries
  2. 1 bunch cilantro
  3. 2 cups pomegranate arils
  4. 2 cups diced fresh pineapple
  5. 1/2 cup diced yellow onion
  6. Juice of 1 orange
  7. salt and pepper, to taste
  8. 1 jalapeño, chopped
  1. In the bowl of a food processor, measure out cranberries and tear up cilantro leaves, removing the stems. Pulse until chopped, or desired consistency is reached. Pour into a large bowl and stir with remaining ingredients. Stir and refrigerate until ready to serve. Spoon into large bowl and serve with tortilla chips.
  1. I recommend chopping the onion, pineapple and pomegranate arils separately. Putting the onion and pineapple in the food processor will create a stronger and watery salsa. By chopping these separately and mixing them into the bowl of pulsed cilantro and cranberry you'll have a less watery final result.
