Turkey Cranberry Grilled Cheese Sandwhich

Still wandering around the kitchen wondering what to do with the leftover turkey sitting in your fridge? There are a million ways to re-purpose that leftover turkey but who doesn’t love the quintessential post-Thanksgiving leftover sandwich with all the fixings! I know in my house we go out of our way to make extra Thanksgiving portions FOR the leftovers! There are so many variations of the perfect Thanksgiving sandwich – mine includes cranberry sauce, avocado, melted brie and thick toasted bread! You’ll love this variation with melted Brie Cheese and Cranberry Walnut Bread – however, you can truly substitute any type of cheese and bread!

Turkey Cranberry Grilled Cheese Sandwich
There are so many variations of the perfect post-Thanksgiving sandwich - mine includes cranberry sauce, avocado, melted brie and thick toasted bread!

Ingredients
  1. 4 slices cranberry walnut bread
  2. 6 slices brie cheese, rind removed
  3. 4 slices turkey breast
  4. 1/4 cup cranberry sauce
  5. 1/2 avocado, sliced
  6. 2-3 tablespoons butter
Instructions
  1. Heat a skillet on medium.
  2. Butter one side of each piece of bread. On the unbuttered side of the bread layer half of the brie cheese, half of cranberry sauce, 2 slices of turkey and a few avocado slices.
  3. Place slice of bread on top, buttered side up, cover with a lid and grill in skillet until bread becomes golden. Flip sandwich once, cover again with lid and cook until cheese melts and bottom piece of bread becomes golden.
  4. Cut in half and serve hot.
