Grilled Peach, Burrata and Prosciutto Salad

This past week fresh peaches were everywhere at our local Farmers Market and I just couldn’t resist buying a bushel and using them in as many recipes as possible! Last night after a pretty indulgent food weekend I wanted something flavorful but light and healthy for dinner. The peaches were just staring at me from our butcher block and I decided to use them in a savory twist for dinner. I quickly grilled the peaches in a grill pan until they were nice and caramelized and had pretty grill marks. I made a bed of arugula and topped with a few slices of prosciutto, buratta cheese and the grilled peaches then finished off with some lemon flavored olive oil and balsamic vinegar – quick, light, healthy and a few more peaches down!

Grilled Peach, Buratta and Prosciutto Salad
Serves: 2
  • 2 peaches, halved and pit removed
  • 1 tablespoon butter
  • 8 slices of prosciutto
  • Ball of burrata cheese, sliced in half
  • Fresh Arugula
  • Olive Oil and Balsamic Vinegar
  • Kosher Salt and Black Pepper
  1. On a plate create a bed of arugula. Add 4 slices of prosciutto around the plate. Place half of the ball of burrata cheese in the middle of the bed of arugula.
  2. Cut peaches in half; remove pit. Lightly butter each half of the peach.
  3. Place peach halves face down onto hot grill pan. Grill for 1-2 minutes until peaches caramelize and have grill marks. Cut each half into three sections. Place peaches around plate on bed of arugula.
  4. Finish salad with a drizzle of olive oil and balsamic vinegar. Sprinkle kosher salt and fresh cracked black pepper.
