Mozzarella, Basil and Nectarine Crostinis

Right now the basil is exploding in our garden and I am looking for any and every recipe to put this fragrant herb to good use! This mozzarella, basil and nectarine crostini recipe was perfect! It’s a great appetizer or even perfect for a light lunch. This recipe is comprised of a few simple and fresh ingredients and the best part of all – no cooking! It’s simply assembling all of the delicious components and then enjoying!

Mozzarella, Basil and Nectarine Crostinis
  • 4 (4-inch-long) slices good bread
  • Olive oil
  • 1 (4-ounce) ball fresh mozzarella
  • 1 large nectarine
  • 4 large or 8 medium leaves basil (plus more for garnish, if desired)
  • Balsamic Vinegar
  • Fleur de sel
  1. Brush both sides of the bread with olive oil and grill or broil until browned.
  2. Cut the mozzarella ball in half and cut each half into 6 slices. Halve and pit the nectarine and cut each half into 6 slices.
  3. Assemble each crostini in this order: bread, 3 slices mozzarella, 1 or 2 basil leaves, 3 slices nectarine. Then drizzle balsamic vinegar on top and lightly sprinkle with salt (not too much – just a hint). Serve immediately.
