Grilled Strawberry Shortcake

To round out my week of grill recipes I thought I would share this incredibly easy and delicious dessert that’s made right on the grill! This past week when visiting the Farmers Market in my neighborhood fresh Michigan Strawberries were everywhere and I couldn’t help experimenting with a grilled strawberry recipe! This is a deconstructed version of a strawberry shortcake with pound cake squares and strawberries skewered and grilled for roughly 30-60 seconds on each side. However, there’s a twist…to make this even more unique this recipe has a delicious orange marinade that is brushed on to the strawberries and pound cake after placing on the grill. It gives it an extra punch of citrus flavor and blends extremely well with the strawberries. I rounded out this dessert with a few scoops of vanilla ice cream but you can also use fresh whip cream or even vanilla Greek yogurt if you’re looking for a healthier or lighter version of this summertime favorite!

Grilled Strawberry Shortcake
  • 1 large pound cake, cut into 2 inch cubes
  • 1 2 pound package strawberries, washed
  • 1½ gallon of frozen vanilla ice cream (or you can use whip cream or Greek yogurt)
  • ½ teaspoon orange zest
  • ½ cup orange juice, fresh squeezed
  • 2 tablespoons brown sugar
  • 1 tablespoon water
  • ⅛ teaspoon sea salt
  • ½ teaspoon vanilla
  • Bamboo skewers
  1. Spray grill with cooking spray. Preheat grill to medium-high setting.
  2. Skewer strawberries and pound cake, alternating on each wooden skewer.
  3. To make the orange marinade combine all ingredients above (from orange zest down) in a small mixing bowl.
  4. Place skewers on the grill, brushing with the orange marinade. Grill 30-60 seconds per side, until light grill marks appear. Turn over, brush on marinade and grill an additional 30-60 seconds until again lightly grilled and warm.
  5. Serve with vanilla ice cream, whip cream or vanilla Greek yogurt.
