This creamy avocado dip is absolute showstopper! I must admit I first saw this recipe in an US Weekly magazine and my Mexican food loving husband was a bit skeptical of this dip and begged me not to “ruin” avocados with feta cheese. I attempted it anyhow and hoped for the best! End result – happy husband and winning recipe for summer cookouts! This dip is given lots of flavor with the garlic and lemon juice and it’s incredibly creamy after blending together until smooth in a food processor. We paired with pita chips and tortilla chips. You can also add chopped veggies for a healthy alternative to the chips.
- 2 ripe avocados
- ½ pound (8 ounces) feta cheese, crumbled - you can reserve a few crumbles for garnish
- 4 garlic cloves, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Combine all ingredients in a food processor until smooth.
- Spoon the dip into a bowl, garnish with feta and serve with chips (pita or tortilla) and crudites.
