Cupcake Platter and Single One

Cupcakes and frosting are two of my biggest weaknesses and guilty pleasures!! Anyone who knows me knows that I am a sucker for vanilla cupcakes with vanilla butter cream frosting! Yum! However, it seems quite fitting for Valentine’s Day to make Red Velvet cupcakes. I am always on the hunt for a delicious Red Velvet cupcake as I find most of the recipes I’ve tried in the past are either too dry or the blend of favors just doesn’t hit the spot. As you may or may not know Red Velvet is a buttermilk cake with a hint of cocoa. This recipe was perfection! The cake was moist, flavorful, with just the right amount of chocolate and the cream cheese frosting is my tried and true recipe I’ve been making for years! I can guarantee you this will be a hit for your special Valentines this year!


Red Velvet Cupcakes with Cream Cheese Frosting
 
Ingredients
  • 1 cup shortening
  • 1¾ cup sugar
  • 2¼ cup cake flour
  • 1¼ teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1½ teaspoon white vinegar
  • 1 ounce red food color
  • 1½ teaspoons cocoa powder
  • 8 ounce package cream cheese, softened
  • ½ cup butter, softened
  • 2 cups confectioners sugar
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat your oven to 350 degrees.
  2. In your mixing bowl, cream together the shortening and sugar. In a large liquid measuring cup, combine the eggs, buttermilk, vanilla, baking soda, vinegar, and salt. Add the flour into the mixing bowl in three additions, alternating with the wet ingredients. Start and end with the flour. Once combined, stir together the red food color and cocoa powder in a small bowl. Add into the batter and mix just until incorporated.
  3. Divide the batter into muffin tins with liners, filling each with about ¼ cup of batter. Bake for 15-17 minutes or until a toothpick comes out clean. Cool in the pan for a few minutes and then remove from the pan to cool completely.
  4. While the cupcakes are cooling, make the cream cheese frosting.
  5. Combine the 8 ounces of softened cream cheese and ½ cup softened butter in a medium bowl with an electric mixer until smooth. Add 2 cups of confectioners sugar and mix at low speed until combined. Stir in 1 teaspoon vanilla and mix again. Frost on the cooled cupcakes and garnish with festive Valentine's Day treats - you can use sprinkles, candy hearts, or heart picks like I did.
