Looking for a warm, gooey, cheesy appetizer to serve for a get together with friends or maybe pre-planning your Oscar party menu…then this is the appetizer for you! It hits all of the crowd favorites…cheese, prosciutto and soft pillowy pizza dough rounds that everything gets piled on top of. This is a recipe I’ve been making for years and it never disappoints. The prep time is less than 30 minutes and you can either make your own homemade pizza dough or buy a ball of pizza dough to save a bit of time. This recipe yields 24 mini pizzettes so it’s perfect for a small group of friends. You can garnish the final pizzette with sprigs of rosemary which add a nice flavor and spruce up your serving platter for presentation points!

Pizzettes with Caramelized Onions, Goat Cheese and Prosciutto
  • 3 tablespoons olive oil
  • 3 large onions, sliced (about 4 cups)
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon herbs de Provence
  • 1 teaspoon sugar
  • Homemade Pizza Dough or a 12-16 ounce ball of purchased pizza dough
  • 3 ounces goat cheese, crumbles (about ½ cup)
  • 2-3 ounces prosciutto (about 5 large slices), cut into 2x2 inch pieces
  1. In a large skillet, heat the oil over low heat. Add the onions, salt, pepper, herbs de Provence, and sugar. Stir to combine. Continue cooking over very low heat, stirring occasionally, until the onions are caramelized and dark golden brown, about 45 minutes to 1 hour.
  2. Pre-heat oven to 475 degrees.
  3. Roll out the pizza dough into a ¼ inch thick round. Using a 2½ inch round biscuit cutter (or you can use a large mouthed drinking glass), cut out 24 dough circles. Arrange the circles on a large baking sheet. Place a small spoonful of the caramelized onions on each dough circle. Top with a small amount of goat cheese. Bake until golden and bubbly, about 10 minutes.
  4. While still hot, top each pizzette with a piece of prosciutto. Arrange on a serving platter and garnish with sprigs of rosemary. Serve immediately.
