Minestrone with Tortellini

This minestrone is the perfect balance of nutritious vegetables and a little indulgence (pancetta and cheese tortellini). This soup is very hearty with lots of vegetables and white beans and has a smoky flavor with the pancetta. It’s an easy crowd pleaser and perfect with a rustic loaf of bread for sopping up all of that delicious tomato broth! It makes 6-8 servings so it’s perfect for a family or a couple with enough leftover to pack for lunch the next day!

Minestrone with Cheese Tortellini and Pancetta
Serves: 6-8
 
Ingredients
  • 3 tablespoons olive oil
  • 2 slices pancetta (or you can substitute bacon), chopped into small pieces
  • 1 large onion, peeled and chopped
  • 2 large cloves garlic, minced
  • 1 leek, trimmed and thinly sliced
  • 3 carrots, peeled and chopped
  • 2 ribs celery, chopped
  • 1 zucchini, chopped
  • 1 potato, peeled and chopped
  • 4 cups vegetable stock
  • 1 15 ounce can white beans
  • 1 28 ounce can crushed tomatoes
  • 1 cup kale, finely chopped
  • 1 9 ounce package cheese tortellini
  • Aged Balsamic Vinegar, for drizzling on top
  • Grated Parmesan cheese, for sprinkling on top
Instructions
  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the pancetta pieces and cook for a couple of minutes, until they start to turn brown.
  2. Add 2 more tablespoons of olive oil along with the chopped onion, garlic and leek. Continue to cook, stirring occasionally, over medium heat until softened.
  3. Add the chopped carrot, celery, zucchini, potato and stir around for a minute or two.
  4. Add the stock, the beans, and then the crushed tomatoes. Add a few generous pinches of salt. Bring the soup to a boil, then reduce the heat to a simmer and cook for 30-40 minutes, until the potatoes are just tender.
  5. Add the kale and tortellini, and continue to cook over a simmer until both are tender and cooked through, about 5-7 minutes. Taste and add more salt if necessary. Serve garnished with a few drops of the aged balsamic vinegar and a sprinkling of grated parmesan cheese.
