Chili

Who doesn’t love a warm, spicy bowl of chili on a winter night? I feel as though I am always experimenting with chili recipes before Super Bowl Sunday so I can debut this knockout chili for friends on Super Bowl day! Well…in my hunt this year I came across this white chicken chili which was super healthy and very tasty and had quite a kick. My husband adds hot sauce to most everything so when he didn’t need to add any extra heat to his bowl of chili I knew this was a winner! You can easily change the amount of heat in this recipe and keep it mild, medium or spicy. I love that this has lots of vegetables, spice and no red meat…the chicken adds the “meaty” taste but it’s a great change from a red meat chili. I like to finish my bowl of chili off with sliced avocado, lime wedges, sour cream or cheddar cheese…or all of them together!


Slow Cooker White Chicken Chili
 
Ingredients
  • 1 pound boneless, skinless chicken breast, raw and cubed
  • 1 (16 ounce) can fire roasted or regular diced tomatoes
  • 4 (16 ounce) cans of Great Northern Beans, rinsed
  • 1 (4 ounce) can fire roasted green chiles
  • 2 medium onions, diced
  • 6 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 4 tablespoons chili powder (this makes it spicy; if you want a more mild to medium heat just add 2 tablespoons - you can always add more later if you want to kick up the heat)
  • 2 teaspoons cumin
  • 1½ cups reduced sodium chicken stock
  • 1 cup grated cheddar cheese
  • Salt and Pepper to taste
Instructions
  1. Saute the onions and garlic in a pan with the extra virgin olive oil until the onions are translucent.
  2. Put the tomatoes, chicken, beans, chiles, chili powder and cumin into the slow cooker. Once the onions and garlic are cooked, add them as well with 1 ½ cups of chicken stock. Stir well.
  3. Cook the chili 4-5 hours on high or 6-8 hours on low.
  4. About an hour before serving, add the 1 cup of Mexican cheese and salt and pepper to taste (and more chili powder or cumin if you’d like).
  5. Serve and add the optional toppings if you so choose!
