Banana Bread

I am always on the hunt for a delicious banana bread recipe…banana bread is so basic and easy to make but a few ingredients can change the entire feel of the banana bread. This banana bread recipe has sour cream which lends a really flavorful and moist addition to the recipe. Also, I love that this recipe only calls for 2 bananas…I never seem to have more than 2 bananas lying around ready for baking bread so this was the kicker for me! I didn’t add nuts to my recipe but can you make this a Banana Nut Bread recipe easily by adding 1/2 chopped nuts (any kind you prefer…walnuts, pecans, etc). Almost all of the ingredients in this are basic pantry staples so it’s easy to whip up for breakfast on a lazy weekend morning when you don’t want to leave the house, like me today!

Sour Cream Banana Bread
  • ½ cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup sour cream
  • 2 medium bananas, mashed
  1. Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan.
  2. In a large bowl,whisk together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream and bananas. Spread evenly into the prepared pan.
  3. Bake at 350 degrees for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing. Transfer to a wire rack to cool completely.
