Fondue

This is a New Year’s Eve tradition…dust off the fondue pot hiding in the back of your pantry and pop a bottle of champagne and get festive for the New Year! This is such a fun way to enjoy a cheese course with your friends and everyone gets so excited to bite into a little piece of bread smothered in warm, bubbly cheese! This is a fabulous rendition with three cheeses (gruyere, emmentaler and brie) and sparkling wine! You can add any fondue accoutrements that you like…fruit, meats, pickled veggies, bread, olives. Really what doesn’t taste good dipped in cheese?!

ingredients:
1/2 pound Gruyere cheese, shredded
1/2 pound Emmentaler cheese, shredded
2 ounces Brie – rind discarded, cheese cut into small chunks
1  1/2 tablespoons all-purpose flour
1 garlic clove, halved
1  1/4 cups dry sparkling wine
2 teaspoons brandy
1/2 teaspoon nutmeg
salt and pepper

directions:
In a bowl, toss the cheeses and flour. Rub the inside of a fondue pot with the cut sides of the garlic. Add the sparkling wine and simmer over moderately low heat for 3 minutes. Add the cheese in small handfuls, stirring constantly until melted before adding the next handful. Stir in the brandy and nutmeg. Remove from the heat and season with salt and pepper. I like to serve hot and place a small sterno underneath the fondue to keep the fondue warm and bubbly while eating. Serve with fondue accoutrements such as grapes, apples, hard salami, cubed bread and mini dill pickles.
