These date pinwheel cookies are another holiday staple in our household during Christmas. Each Christmas when my Mom bakes these they remind me of my Grammie Abbott and her love of Christmas baking. I even use a copy of her handwritten recipe each year to bake these which conjure up special Christmas memories. These log cookies can easily be wrapped in plastic wrap and placed into the freezer. You can simply take them out of the freezer, chill and then slice and bake off.
1/2 cup butter
1/2 cup light brown sugar
3/4 cup granulated sugar (reserve 1/4 cup for dates)
1/2 teaspoon vanilla
2 cups sifted flour
1/4 teaspoon baking soda
7 1/4 ounces pitted dates
1 cup finely chopped walnuts
Cream butter, add brown sugar, 1/2 cup white sugar, vanilla and egg. Beat until light, add sifted dry ingredients. Chill until firm.
Filling: Chop dates, bring to a boil with 1/4 cup sugar and 1/3 cup water. Simmer 5 minutes, stirring often. Add nuts and cool. Roll dough into a 9″x12″ rectangle on floured wax paper.
Spread filling. Roll up. Chill overnight. Slice 1/8″ thick and bake at 375 degrees for 10 minutes.
