Split Pea Soup

Looking for something to do with your Thanksgiving leftovers this weekend? If you had a ham, like we did, save your ham bone and whip up this very easy and tasty Split Pea Soup with Ham in your Slow Cooker. It’s a delicious and hearty soup option that is very easy to assemble and once again, in the motto of the slow cooker, set it and forget it! This soup also pairs excellently with my Thyme Popovers.

1 (16-ounce) package dried green split peas, rinsed
1 meaty ham bone
1 cup sliced carrots
1 cup chopped yellow onion
2 ribs of celery chopped
2 cloves garlic, minced
1 bay leaf
1/4  cup chopped fresh parsley
Salt and pepper to taste
6  cups chicken broth

Layer ingredients in slow cooker in the order given, adding the broth last. Do not stir ingredients.
Cover and cook on high 4—5 hours or on low 8—10 hours until peas are very soft and ham falls off the bone.
